Remove Atom as default text editor for Ubuntu 18.04

I installed Atom for Julia development and it is great! But now whenever I open any text file, it opens in Atom, like tex, bib, etc. I do not want this behaviour as I have configured Sublime for other text editing. How do I remove atom as the default text editor? I tried these instructions, but I do not see Atom anywhere in my /usr/share/applications/defaults.list file.

Can you right-click on some .txt file, click Open With Other Application, click View All Applications, click Sublime and select it? And then do the same for .bib files?

That seems to set the default editor for particular file types for me on Ubuntu 18.04.
